A Garden Lunch

The warm weather really helps me simplify meals. Today’s lunch: avacado, tomato, cucumber, radish and hummus on lightly toasted wheat pita. I’m a mayo-addict so the hummus really works to satisfy that condiment craving. This sandwich reminded me of summer gardens and farmer’s markets - which I hope to get to this Saturday. Everything just bursts with more flavor when you get it from the local farmer’s market ;)

And of course… I love me some greenie. Today’s blend:

  • pink grapefruit
  • orange
  • red chard
  • water
  • ice

I included a picture of the red Chard below, just in case you’ve never seen it. My mom used to grow Swiss Chard in our garden so I’ve been a fan for a long time - but I always had it cooked. Now I’ve come to appreciate raw chard in my greenies (I just remove some of the stem since that is usually the most bitter or tough part) and sometimes in salad. Even if you don’t like the taste, you have to admit, it’s gorgeous - and just crazy looking. Nature - the ultimate creative artist!
