Pink Yum in a Glass

Thank you Mascarah for bringing this recipe from Goop to my attention. It’s on my list for this week as my alternative to the orange/carrot/ginger that I normally make at least once a week now.

This year I will be healthier. Not vegan (I love bacon!) but healthier.

Gwyneth (myfavoritecelebrityevereverever) to the rescue.

This recipe is from her GOOP newsletter (if you haven’t subscribed yet- you are crazy and must immediately) and she’s right. It just took me 5 minutes and it is totally delicious.

BEET, APPLE, CARROT & GINGER JUICE.

SERVES: 1
TIME: 5 minutes

  • 1 large or 2 medium beets, cut into wedges
  • 1/2 lemon, zest and pith removed
  • 2 large carrots
  • 1 large apple, cut into wedges
  • 1” piece of ginger

Juice everything into a glass, give it a stir and enjoy.
