Pizza might be one of my all time favorite foods. But I have a new way of eating it now. I always try to fill my plate with a huge salad and smaller piece of pizza. If I’m tempted to get more of the cheesy stuff, I make sure to refill the greens too. It definitely helps me control portions and leaves me with leftovers for the next day ;)

This was an amazing green smoothie and super simple to make. It’s just 1 mango, 1 orange and lots of fresh parsley (the curly kind) - I probably added about 1 cup of cold water or more (mango’s make smoothies get really thick) and some ice. So good and refreshing.
And the nutrients! Here’s a bit o’ info for you.
Parsley - it’s not just a garnish! It has tons of iron, vitamins C, A, K and folate too. Check out the link to learn more about it’s cancer-fighting properties, heart health benefits, anti-oxidants and more.
Mango - it took me a while to warm up to mangos, but now they are one of my favorite treats. And health-wise, they are full of vitamins C, A and B6, Potassium and Copper. They are also high in fiber and beta-carotene.
Orange - always a crowd pleaser, most of us know they are full of vitamin C, but also vitamin A, calcium and fiber as well as disease-fighting phytochemicals.
And it tastes good whether you know all that or not!

I can’t wait to make these with the coconut frosting - or without any because they look good enough without frosting.

It’s coming up fast and I usually get caught at the last minute trying to figure out something creative to do. This year my gift is even more special because it’s a tribute to 2 mamas. My mom, Frannie, who has been a loving, supporting force all my life. and Mama Lucy, a mama to an entire school in Tanzania. Selling chickens for seed money, this woman built a school for kids and now wants to add a home on the campus where in-need children can live. Pretty amazing.
