A Garden Lunch
The warm weather really helps me simplify meals. Today’s lunch: avacado, tomato, cucumber, radish and hummus on lightly toasted wheat pita. I’m a mayo-addict so the hummus really works to satisfy that condiment craving. This sandwich reminded me of summer gardens and farmer’s markets - which I hope to get to this Saturday. Pink Yum in a Glass

Grapes: An Antioxident Breakfast
The other morning as I was about to make a greenie, I decided to try something new - grapes. I snack on them every once in a while, but had never put them in the Vitamix. I got a little creative and actually came up with a great little combo.
1 giant handful of washed, chilled red grapes (add more as desired)
1/2 a cucumber
1/2 an avacado
1/2 a grapefruit
small handful of sunflower...

Breakfast Quinoa by mydailybread
Thank you Courtney for this great recipe. I’m a big fan of the Q-grain, but have never had it like this. Must try. Beautifully photographed too. (note, at first I thought those were pieces of bacon in there - glad to see they are dates!)
